The Musselburgh hat is a classic, wildly popular knitting pattern that is hugely flexible and a great stash busting pattern.
The first hat I made uses a cashmere blend for the brim and an unmarked wool blend I thrifted a few years ago. It is knit on 3.5mm needles.
